To evaluate the effect of adding an infusion of avocado peel (Persea americana) to a whole yogurt on the polyphenol content and antioxidant capacity. Material and methods: Avocados were obtained from Mercado Los Cedros, the shells were separated and dehydrated. Subsequently, an infusion of avocado peel (ICP) was made at 10%. To determine the polyphenol content, the Folin-Ciocalteau method was used and to determine the antioxidant capacity, the DPPH (2,2-diphenyl-1-1-picrylhydrazil) method; Gallic acid and TROLOX were used as standard, respectively. Results: It was found that in the added avocado peel infusion there was 129,68 ± 15,6 µg GAE/100g of polyphenol content. It was found that in the added avocado peel infusion there was 33,94 ± 4,8 % inhibition and 25,45 ± 15,89 mM TEAC of antioxidant capacity. Infused yogurt with 2% added avocado peel infusion was found to have 14,18 ± 0,7 µg GAE/100g polyphenol content, almost 5 times less polyphenol content than avocado peel infusion. It was found that in the infused yogurt with 2% added avocado peel tea there was 28,09 ± 9,2 % inhibition and 28,08 ± 10,6 mM TEAC of antioxidant capacity. Furthermore, when comparing the quantification of YICP and its control (yogurt alone), there is a difference in the percentage of inhibition of 27 times more. Conclusion: The ICP has 129,68 ± 15,6 µg GAE/100g of polyphenol content and 25,45 ± 15,89 mM TEAC of antioxidant capacity. The YICP has 14,18 ± 0,7 µg GAE/100g of polyphenol content and 28,08 ± 10,6 mM TEAC of antioxidant capacity. By adding the avocado peel infusion to the yogurt, the antioxidant capacity increases
