The main objective of this research work is to evaluate the viability of implementing a healthy juice and fresh fruit station business, which offers natural juices, fruit bowls with highly nutritious additives and healthy supplements in shopping centers in Lima, at districts with significant presence of NSE B/C, in order to offer a healthy, fast and good-tasting food alternative. The business plan is based on actual trends, which reflect the consumer's concern for health care, since due to diseases associated with poor nutrition, a healthy lifestyle is being promoted and this motivates consumers to make their food choices more consciously. In addition, the growth of healthy commerce and the consumption of carbonated beverages or ultra-processed foods in juice bars, open up a market opportunity for the proposed business. Through the application of a survey, it was possible to know the preferences of the consumers for this type of products and the expectations about the business proposal, which allowed to identify the strategy and competitive advantage, which differs from the usual proposals since it poses a healthy eating alternative in shopping centers that are used to offer ultra-processed food, carrying an innovative format that highlights the "freshness" and "health" components through the display of fruits and vegetables as part of the design of the establishment and the presentation of products, also providing a quality customer experience. Finally, it is concluded that the project is profitable, viable and generates value, supported by the evaluation of financial indicators: NPV: S/.1,339,939.87, IRR: 82% and a payback period of the investment of 2.09 years.
