This research work was developed in the company CHOCOCACAO S.A.C located in the district of San Luis (Lima) and had the objective of giving a proposal for improvement in quality, elaborating a manual of Good Manufacturing Practices for the elaboration of dark chocolate and an inspection plan and statistical control in the reception of cocoa beans. After the diagnosis using the hygiene methodology for food factories (D.S. 007-98 S.A.), a score of 40.76 percent was obtained, having a rating of "Bad Conditions". In the company, an inefficient reception and non-compliance with the requirements of the cocoa beans were evidenced, which is why it was proposed to make an improvement at this stage, an inspection plan and statistical control were carried out; To define this proposal, the following steps were used, first the control criteria to be established in the inspection of the reception of the cocoa bean were identified, which were: sanitary requirements of transport and bags, then a sampling plan and finally the analysis of check: moisture and total acidity. Next, the variability with which the supplier delivers the cocoa beans was evaluated through statistical control analysis in the reception of cocoa beans, for which the variables humidity and acidity were used, parameters that influence the quality of chocolate.
