At this time there is a great respectable demand for natural colors alternative to artificial colors, such as red, due to their toxicity in food, makeup and apothecary products. Anthocyanins are natural dyes with great potential for competitive replacement of artificial colors; Therefore, it is very important to know the biochemical aspects that frame these pigments. The objective of this review is to offer an updated scheme of the chemical and bioactive qualities of anthocyanins and their potential as natural dyes. Anthocyanins are dyes responsible for the range of colors ranging from red to blue of many fruits, vegetables and cereals. The interest in these dyes has intensified thanks to its possible hygienic and beneficial effects, which include the decrease in coronary suffering, anti-cancer, anti-tumor, anti-inflammatory and anti-diabetic effects; in addition to the improvement of visual subtlety and sapient behavior. The bioactive positions of anthocyanins open a new appearance to obtain dye products with added value for human consumption.
