This work was carried out in the food microbiology laboratories at the Faculty of Food Industries; Chamaesyce thymifolia samples (pie de paloma) were collected at Nina Rumi - Road Zungarococha - San Juan – Iquitos. The main objective of the study was to assess the in vitro antibacterial activity of ethanol extract of Chamaesyce thymifolia "Pie de Paloma" by Macrodilution and agar diffusion. The strains used were Pseudomona aeruginosa ATCC 27833, Escherichia coli ATCC 25922, and Staphylococcus aureus ATCC 25923. As positive control was used the antibiotic Gentamicin and as negative control a solution of ethanol / water concentration 1: 1 (50% / 50%). The phytochemical screening of the ethanol extracts of Chamaesyce thymifolia “Pie de Paloma" showed the presence of triterpenoids and steroids, phenols and tannins, alkaloids, lactones, curmarinas and flavonoids. Concerning the the ethanolic extract antibacterial activity, against Escherichia coli, a concentration of 12mg presented an inhibition of 19.7 mm, while the concentration of 6mg presented a halo of 15.7mm. Against Staphylococcus aureus, a concentration of 12mg showed an inhibition of 28.3 mm, while the concentration of 6mg presented a halo of 22.7mm. Against Pseudomonas aeruginosa, concentration of 12 mg presented an inhibition of 19.3 mm, while the concentration of 6mg presented a halo 14.7mm. By method of Macrodilution, the ethanol extract of Chamaesyce thymifolia "Pie de Paloma" proved to be very active against Escherichia coli (MIC: 2mg / ml); for Staphylococcus aureus it proved to be very active (MIC: 4 mg / ml), likewise against Pseudomonas aeruginosa (MIC: 4 mg / ml).
