Fruit Annona muricata L (soursop) collected from the Experimental Center "El Dorado" - NIA the content of compositional and antioxidant peel and pulp was evaluated, using a design for convenience, the following proximate analyses of cascara was performed giving the results of 327.26kcal energy, fat 0.98%, 72.78% carbohydrates, 6.83% protein, 1.79% ash, 17.62% moisture and 50.0mg of vitamin C; dehydrated pulp have of 200.27 kcal of energy, fat 1.07%, 64.79% carbohydrates, 7.87% protein, 10.51% ash and 5.76% moisture. For fresh pulp we have titratable acidity 0.15, 0.23% fat, carbohydrates 14.78%, 0.92% protein, 0.56% ash, 83.51% moisture and 19.08mg of vitamin C. The extract obtained by maceration in ethanol 1% formic acid, via UV-Vis spectrophotometer tests of antioxidant activity (AA), which they found greater presence in the shell in this order, total phenolics were performed ( 55967 ± 0061 EAG mg / 100g original sample), anthocyanins (-1.4300mg cyanidin-3-glucoside / 100 g of original sample), flavonoids (quercetin 0.37 ± 0.00 g / 100g original sample), tannins (8810 mg (+ ) catechin / 100g original sample), the presence in the pulp of total phenolics (369,398 ± 0061 mg EAG / 100g original sample), anthocyanins (6.4691 ± 2.4099 mg of cyanidin-3-glucoside / 100 g was also determined Original) shows, flavonoids (quercetin 0.01 ± 0.00 g / 100g original sample), tannins (84,925 ± 0.0 mg (+) - catechin / 100 g original sample).
