Many diseases caused by intake contaminated food products manifest with problems especially diarrheal. According to the World Health Organization (WHO), 70% of cases of diarrhea are due to consumption of these contaminated foods. Therefore, the purpose of this investigation was to determine the microbiological quality of chorizo that is expended on the market of Belen Iquitos city. The chorizo is a product of great marketing in the city; therefore, we should know the condition of the product that we consume. The sample population was taken from 14 stations distributed in the market Belen !quitos city, was collected 250 g of chorizo from each sales stall and driven to the laboratory under conditions suitable for subsequent analysis. For the determination of the microorganisms present in the sample, we used the Most Probable Number method NMP and in Plate Count Method. According to the post-test results, in the determination of Mesophile aerobic, ofthe 14 stalls selling, 8 stalls (57.1%) exceed the Minimum Allowable Limit (1.0 x 106 g 1 ml). In the determination of Scherichia coli, in the 14 stalls selling analyzed, there was presence ofthe organism but ofwhich 64.3% (9 posts) exceeded the minimum allowed (50 g 1 ml). In the analysis of Staphylococcus aureus, results showed that 35.7% (5 seats) are above the minimum allowed, exceeding 102 g 1 ml. In the determination of Salmonella sp. was observed the complete absence of microorganisms in the 14 sales stalls analyzed. After having performed the corresponding analysis concluded that, only 4 (28.6%) dispensing stations have good microbiological quality and 10 (71.4%) dispensing stations in sorne of its samples exceeded the standards set, concluding that they are not suitable for human consumption.
