The objectives of the study were the determination of the bacterial contamination of honey without sting in the extraction and packaging process, survival time of E. coli, as well as the determination of the antibacterial capacity, minimum inhibitory concentration (MIC) and minimum bactericidal concentration (MBC) of honey against E. coli; Four samples of honey were used: mature, immature honey collected by the producer and packaged for storage. In the extraction and packaging process, the lowest average of 800 CFU was obtained in mature honey, while in the others there were higher values; E. coli manages to survive up to 32 h of average time, the honey of packaged bee for its storage showed greater bactericidal action of 11.74 mm of diameter in size of inhibition halo, with respect to the MIC it was similar in the mature honey, collected by the producer and packaging for storage had 125 mg / ml, however four times more immature honey is needed to achieve a similar effect. It is concluded that the honey produced by melipónidos presents bacteriological load, this load shows an inhibitory effect on the growth of E. coli reason why its potential medicinal use is very promising to safeguard the health of the population.
