This thesis project was conducted in the laboratory of Phytochemistry, Faculty of Chemistry UNAP Engineering, with a period of 4 months and Testing Magnetic Resonance Imaging were performed in collaboration with the Pontificia Universidad Catolica del Peru. The seeds of Theobroma subincanum Mart. (Cocoa Varillal) were obtained from harvesting cobs at km 16 of the road Iquitos - NautaVarillal the community; in the district of San Juan department of Loreto, after transfer, were dried at room temperature (25- 30 °C), ground and then 95 g of sample was picked for degreasing in soxhlet equipment; was used as solvent to petroleum ether at a temperature of 45 °C for about 120 hours, until the fat content of the sample runs, the yield of Theobroma subincanum Mart. (Cocoa Varillal) was 1.27 g of theobromine in crystalline form, equivalent to 1.34%. Using the method of selective inclusion theobromine adsorbed to MgO and des adsorbed 10% H2SO4. Crystallize theobromine with 10% NaOH. For the structural elucidation of the isolated substance was performed using methods of physicochemical and spectrometric tests. Of physico the Melting Point Kisatom team checked in obtaining the value of 351.8 °C. From Thin Layer Chromatography (TLC) on the run value of Rf x 100 = 36 is obtained for the molecular weight determination was performed by the method of Rast obtaining the value of 180.45 g/mol, with a margin of error 0.15% as the literature shows that the molecular weight of theobromine is 180.18g/mol. From spectrometric evidence for the elucidation of the chemical structure -Visible UV spectrometry in the UV spectroscopy equipment - Visible Genesis VI registers a λ max value of 275 nm identical to that literature offers us. Test Proton Nuclear Magnetic Resonance Carbon-13 and offset values show that the isolated substance is theobromine
