The objective of this research work to determine the relationship between the daily consumption of fatty acids and the serum levels of total cholesterol in overweight and obese teachers of the Shuji Kitamura N ° 101 school in Santa Anita- 2019. The quantitative study, by descriptive-correlational type, had as a census sample 25 overweight and obese teachers between 25 and 64 years of age (2 men and 23 women). SPSS Statistics v23 Software and descriptive statistics were used for data processing. To relate variables, Spearman's Rhó correlation was used, being represented in graphs and tables. The results show that 44% are overweight; 52% are obese and 4% are morbidly obese. The serum levels of total cholesterol, within the normal parameter, are 60% and, in the elevated parameter, 40%. The median daily intake of fatty acids in teachers was as follows: total fat = 38.02 g +/- 14.97 g; monounsaturated fats = 16.64 g +/- 5.49 g; polyunsaturated fats = 14.36 g +/- 5.79 g; saturated fat = 12.7 g +/- 7.12 g. In general, it is concluded that there is a significant and moderate relationship (p <0.05) between the daily consumption of fatty acids and the serum levels of total cholesterol in overweight and obese teachers of the Shuji Kitamura N ° 101 school in Santa Anita- 2019.
