The objective of the investigation was to compare the current sanitary regulations of the bivalve mollusks producing countries. These countries are Peru, Chile and Spain. For this, the regulations of these countries were compiled, and the information found was systematized in tables. Five (5) regulations regarding Peru, seven (7) regulations for Chile and one (1) health guide and three (3) regulations for Spain were compiled. Bivalve mollusks are species with productive advantages; however, the productive areas must comply with the characteristics and parameters of the species. These productions have a positive impact on the economy of the countries, however, their cultivation requires compliance with regulations, laws, guides, to produce innocuous products that are not a danger to human public health. Finally, the evaluation of the results obtained from each country was carried out, they were discussed, and it was possible to conclude that tree countries present regulations that favor sanitary legislation in cultivation, production and commercialization of bivalve mollusks. This has a direct effect on offering harmless products to the national and international markets in favor of human public health. However, Spain is the one that presented advantages such as compensation to companies that cannot harvest the crops and the regulations for waste management.
