This study aimed to make a comparative analysis of the health regulations and measures implemented for the control and prevention of COVID-19 in the international trade of giant squid (Dosidicus gigas) and mahi-mahi (Coryphaena hippurus) between Peru, China, and the United States. To carry out the study, normative documents and regulations from each country related to international fish trade were compiled and descriptive tables were prepared with the relevant extracts. For data analysis, comparative tables were prepared where the sanitary requirements of each standard and measures implemented were compared according to topics of interest. In the results obtained, differences were observed between Peruvian, Chinese and American regulations in the sanitary requirements on location, design and construction; facilities and equipment; cleaning and disinfection; raw material, containers and packaging; process control; control of chemicals, residues and pests; traceability and recall. In the comparison of regulations, differences were observed regarding the suspension of imported food, personal protection, cleaning and disinfection, ventilation, waste control, storage, training, and action measures in the event of positive cases. It is recommended to update articles of D.S N°007-98-SA and D.S N°040-2001-PE according to more recent versions of the General Principles of Food Hygiene and the Code of Practice for Fish and Fishery Products of the Codex Alimentarius.
