Background: Chronic Noncommunicable Diseases (NCDs) are one of the leading causes of mortality globally. Low intake of fruits and vegetables is one of the main risk factors for developing NCDs; the low consumption of this food group is influenced by multiple factors, so it is important to study them. Objective: To determine the association between the consumption of fruits and vegetables with sociodemographic and health variables in people aged 18 and over in Peru, according to the Demographic and Family Health Survey (ENDES) carried out in 2019. Methodology: Cross-sectional, observational and descriptive study. A secondary data analysis of the 2019 ENDES information was performed. The sample of this study was made up of data from 31,409 participants aged 18 years and older. We used the Chi-square test to analyze the association between sociodemographic and health variables with the consumption of fruits and vegetables with a significance level of p<0.05; in addition, to determine the strength of association, the Odds Ratio (OR) was calculated with its 95% confidence interval. Data were analysed using the STATA 16 programme. Results: Only 11.2% of Peruvians over the age of 18 consumed 5 or more servings of fruits and vegetables in 2019. The variables associated with fruit and vegetable consumption were: sex (OR:1.28; 95% CI:1.18-1.39), educational level (OR:1.66; 95% CI:1.52-1.81), wealth quintiles (OR:1.96; 95% CI:1.79-2.14), ethnicity according to mother tongue (OR:1.92; 95% CI:1.71-2.14), area of residence (RW:1.93; 95% CI:1.74-2.14) and natural region (OR:1.40; 95% CI:1.30-1.52). Conclusions: Our findings show that, being male, having a lower level of education, belonging to the strata of poverty, having as mother tongue Quechua, Aymara or another native language and living in rural areas and in the Sierra and Selva regions; were found associated with a higher risk of not complying with the consumption of the 5 or more servings of daily fruits and vegetables recommended in the Peruvian population over 18 years. These results indicate important challenges for researchers and authorities, urging them to create new public policies with the aim of increasing the levels of consumption of fruits and vegetables and thus curbing the increase of NTDEs in the Peruvian population.
