This prefeasibility study evaluates the market, technical, economic, and social feasibility of installing a quinoa-based protein ice cream production plant. The product in question is a healthy, nutritious, and octolith-free option offered in a box with six 473-ml containers, which will have premium ingredients and will meet the product's technical specifications. In the first place, the general aspects are presented, mentioning the problem with the Peruvian population eating habits, presenting this healthy alternative with high protein content and nutritional value that aims to be a supplement and positive contribution to the diet of consumers. The objectives, hypotheses, justifications, among other aspects, are also shown. Within the market study, it was possible to define the levels of the product, as well as the target market composed of people belonging to socioeconomic level A and B, that reside in zones 6, 7 and 8 of Metropolitan Lima. The demand for the project and the marketing strategy are also presented. In chapter III, plant location, the optimal location is in Lima, specifically in the district of Villa El Salvador. As for the plant size, different factors were evaluated and it was determined that it is defined by the project's demand, which represents 86,839 boxes in the last year. The project engineering details the product specifications, production process, material balance, plant capacity and other important components. It also shows that the area required for the plant is 532 m2. In relation to the organization and administration, it is mentioned that it will be registered as a “Sociedad Anónima Cerrada (S.A.C” with MYPE Tax Regime. It also shows the company's organization chart and the job descriptions for the main positions. Chapter VII details the budgets and evaluation of the project, where it is shown that an investment of S/ 3 208 700, is necessary for the execution of the project, as well as indicators that demonstrate the economic and financial viability of the project. With all the above mentioned, the conclusions and recommendations related to the present research project are presented.
