Abstract: El objetivo de esta investigación fue evaluar el perfil sensorial de la mermelada de banano orgánico (Musa acuminata) y piña orgánica (Ananas comosus). Las frutas orgánicas en descarte de exportación fueron recepcionadas, clasificadas y acondicionadas para el procesamiento en mermelada, seguidamente se elaboraron tres formulaciones de mermelada con diferente concentraciones de banano orgánico (B) y piña orgánica (P), como se indica a continuación: B45%,P55%; B55%,P45% y B65%,P35%. Finalmente la mermelada fue envasada y almacenada para sus posteriores análisis. Para la caracterización sensorial de la mermelada primero, se entrenó a los consumidores de mermelada con la finalidad de generar atributos sensoriales del producto; segundo, se listó los atributos generados; tercero, se realizó la prueba CATA y de aceptabilidad de cada muestra a 72 consumidores de mermelada. Se obtuvieron los resultados, donde cada mermelada fue caracterizada por los consumidores con sus respectivos atributos teniendo más tendencia a gustar la mermelada hecha con la combinación de 55% banano orgánico y 45% piña orgánica con sus siguientes características sensoriales: sabor residual a piña con olor a caramelo y apariencia de trozos grandes.

The organic fruits in discard for export were received, classified and conditioned for processing in jam, then three jam formulations with different concentrations of organic bananas (B) and organic pineapple (P) were prepared, are indicated continuation: B45% , P55%; B55%, P45% and B65%, P35%. Finally jam was packaged and stored for subsequent analysis. For the sensory characterization of the jam first, jam consumers were trained in order to generate sensory attributes of the product; second, the attributes generated were listed; third, the CATA and acceptability test of each sample was carried out on 72 jam consumers. The results were obtained, where each jam was characterized by the consumers with their respective attributes having more tendency to like the jam made with the combination of 55% organic banana and 45% organic pineapple with its following sensory characteristics: residual flavor to pineapple with caramel smell and appearance of large pieces.
