Abstract: El objetivo de esta investigación fue determinar la optimización del proceso de elaboración de mermelada de pitahaya (Hylocereus trigonus). Se utilizó la metodología de superficie de respuesta con dos variables independientes (DCCR) 22+2𝐾+3 que es equivalente a 11 ensayos con la variable dependiente que fue la aceptabilidad general de (0 a 10) y las variables independientes que fueron el porcentaje de pectina (0.05 a 0.8 %) y el tiempo de cocción (30 a 80 minutos). Se empleó 50 panelistas no entrenados cuyos resultados fueron analizados con el programa estadístico STATISTICA 13.3. Los resultados mostraron que el tratamiento 6 con un 0.8% de pectina y un tiempo de 55 minutos tuvo la mayor aceptabilidad de 7.76. El análisis estadístico mostró efecto significativo p< 0.05 por parte del porcentaje de pectina de la forma lineal y la forma cuadrática del tiempo de cocción de la mermelada. Los máximos valores de aceptabilidad general se obtienen en concentraciones de pectina de 0.55 - 0.65% y tiempo de cocción de 50 a 55 minutos en la mermelada de pitahaya (Hylocereus trigonus).
ABSTRACT The objective of this investigation was to determine the optimization of the production process of pitahaya jam (Hylocereus trigonus). It’s used the response surface methodology with two independent variables (DCCR) 2 ^ 2 + 2K + 3 which is equivalent to 11 trials with the dependent variable which was the general acceptability of (0 to 10) and the independent variables that were the percentage of pectin (0.05 to 0.8%) and cooking time (30 to 80 minutes). The statistical analysis showed significant effect p <0.05 by the percentage of pectin of the linear form and the quadratic form of the cooking time of the marmalade. 50 untrained panelists were employed whose results were analyzed with the statistical program STATISTIC 13.3. The results showed that treatment 6 with 0.8% pectin and a time of 55 minutes had the highest acceptability of 7.76. The maximum values of general acceptability are obtained in pectin concentrations of 0.55 - 0.65% and cooking time of 50 to 55 minutes in pitahaya marmalade (Hylocereus trigonus).
