The objective of this study was to produce virgin oil by extrusion and recycle the seed of Persea americana (avocado) to obtain colorant and the resulting residue, together with the shell, produced energy pellets for application as biofuel for boilers and to cover the requirement of thermal energy for the process. A sample of 28 units of the strong avocado variety was evaluated, to process it, by means of extrusion, obtaining virgin avocado oil, previously the fruit was selected, peeled, pulped, dried and extruded. The seed together with the shells were pulped and dehydrated using solar energy to later produce densified pellets. It was determined that the avocado samples of the strong variety are composed of exocarp: with an average of 26,15%, mesocarp 56,84% and 17,01% of seeds. The results of the process and recycling showed that with one ton of fruit, 113,70 kg of virgin oil, 53,11 kg of colorant and 178,07 kg of energy pellets are obtained with an average calorific value of 18 997,50 kJ/kg, humidity, 10,30%, with an average density of 1242,38 kg/m3 and a friability index of 1,0.
