Abstract: Los compuestos fenólicos localizadas en las plantas son de considerable interés y han recibido más atención en los últimos años debido a sus funciones bioactivas. Los polifenoles se encuentran entre los fitoquímicos más deseables debido a su actividad antioxidante. Estos componentes poseen propiedades antimicrobianas, antivirales, antiinflamatorias junto con su alta capacidad antioxidante. La papa contiene varios fitoquímicos tales como ácidos fenólicos, flavonoides, que son altamente deseables en la dieta debido a sus efectos beneficiosos sobre la salud humana. Estudios epidemiológicos clínicos y nutricionales han demostrado que la ingesta de hortalizas previene enfermedades degenerativas en la salud humana como cáncer, enfermedades coronarias, diabetes tipo 2, trastornos metabólicos, entre otras, que es causada por el estrés oxidativo a nivel celular. El objetivo de esta revisión fue proporcionar información sobre el desarrollo de la investigación in vitro de polifenoles totales y actividad antioxidante reportados en papa y otras hortalizas y los metabolitos secundarios identificados y cuantificados mediante HPLC-DAD. Se concluye que se obtiene mayor información de la concentración de los fitoquímicos para contribuir a mejorar los estudios clínicos para prevenir enfermedades degenerativas en la salud humana.
ABSTRACT Phenolic compounds in vegetables are of considerable interest and have received more attention in recent years due to its bioactive functions. Polyphenols are among the most desirable phytochemicals due to their antioxidant activity. These components have antimicrobial, antiviral, anti-inflammatory properties together with its high antioxidant capacity. The potato and other vegetables contain several phytochemicals such as phenolic acids, flavonoids, which are highly desirable in the diet because of its beneficial effects on human health. Clinical and epidemiological studies have shown nutritional intake of vegetables prevents degenerative diseases in human health as cancer, heart disease , type 2 diabetes, metabolic disorders , among others , which is caused by oxidative stress at a cellular level. The aim of this review was to provide information on the development of in vitro research of total polyphenols and antioxidant activity reported in potatoes and other vegetables and secondary metabolites identified and quantified by HPLC-DAD. It is concluded that more information on the concentration of phytochemicals is obtained by HPLC-DAD, to help improve clinical studies to prevent degenerative diseases in human health.
