ABSTRACT The objective of the present work was to evaluate the monolayer value of four types of raw and cooked flour based on oats (Avena sativa), quinoa (Chenopodium quinoa) and amaranth (Amarantus caudatus) determined by the GAB model (Guggenheim, Anderson, de Boer). For the construction of the isotherms, sulfuric acid solutions were used as the agent for controlling water activity. The water activities were in the range of 0.1 to 0.9. The types of flour were type A flour (70% oat and 30% quinoa flour in the raw state); type B flour (70% oat and 30% amaranth flour in the raw state); type C flour (70% oat and 30% quinoa flour in the cooked state) and type D flour (70% oat and 30% amaranth flour in the cooked state) the hermetic containers established with each type flour (1 g) and concentration of sulfuric acid was brought to stove with adjustable temperature (20 °C) for 8 days established as the equilibrium condition. After equilibration, the moisture content of the samples was determined by the gravimetric method. To evaluate the variability between the monolayer values for the four types of flour, the multiple-range test was used together with the analysis of variance. The calculated monolayer (g H2O / g d.b.) GAB was 0.1163, 0.1321, 0.1248 and 0.1585 for types A, B, C and D respectively. The analysis of variance shows a significant difference (p<0.05) between the types of flour.
