ABSTRACT The presence of high levels of arsenic in rice crops represents an important interrelationship between the environment and health, considering that this food is massively consumed. The main objective of this research is to measure the concentration of arsenic in the root and fruit of rice (Oryza sativa) grown in the province of Pacasmayo, La Libertad. The method used was flame atomic absorption spectroscopy in a graphite furnace. The samples consisted of 12 root and 12 fruit samples of rice (Oryza sativa) collected from four sectors of Pacasmayo: Cala, Chascarrape, Cerquentin, and Chocafan, to measure the concentration and ensure that they were within the limits established by the Environmental Quality Standard and the Codex Alimentarius Commission. The following results were obtained from the 12 samples of rice root (Oryza sativa) collected from the Cala sector, the average was (31.47 ± 0.30 ug/kg); in the samples corresponding to Chascarrape the average was (33.25 ± 0.44 ug/kg); then in the Cerquentin sector the average was (32.37 ± 0.13 ug/kg); in Chocafan the average was (34.77 ± 0.49 ug/kg). Regarding the 12 samples of rice fruit (Oryza sativa) collected from the Cala sector, the average was (15.57± 0.23 ug/kg); in the samples corresponding to Chascarrape the average was (16.60 ± 0.15 ug/kg); also in the Cerquentin sector the average was (15.67± 0.20 ug/kg); as for Chocofán the average was (16.83 ± 0.13 ug/kg). As conclusions it was obtained that from the 12 samples of rice root (Oryza sativa) the concentration of (0.03297 ± 0.00034mg/kg) was obtained; which is below the admissible limit fixed by the (ECA) which is 50 mg/kg, as for the 12 samples of rice fruit (Oryza sativa), the concentration of (16.17 ± 0.18 ug/kg) was obtained; This value does not exceed the permitted limits and is within the limits established by the Codex Alimentarius Commission, which is 0.2 mg/kg.
