ABSTRACT The food industry is experiencing a greater demand in terms of safety, which is why different systems have been used to guide the processes and to obtain a better efficiency. The HACCP system provides tools that help establish compliance indicators, which improve production, through the identification and determination of critical points, which in turn will be controlled by means of critical limits. It is necessary that these be evaluated, in such a way that preventive and corrective actions that generate improvements can be established. An initial diagnosis was made using the Sanitary Standard for the application of the HACCP system in the manufacture of food and beverages RM N ° 449-2006 / MINSA and the current situation of the Cereals and Legumes laboratory was identified, allowing to determine the action plan to help improve the safety conditions in food. Obtaining 72% compliance after implementation of BPM, POES and HACCP, compared to 63% of initial non-compliance. A series of indicators were developed with which it will be possible to measure and monitor compliance with the Good Manufacturing Practicesand and Standardized Sanitation Operational Procedures, in addition to generating results that help to make decisions for the continuous improvement of the process.
