Abstract: El objetivo de la presente revisión es dar a conocer sobre los efectos de la tartazina en los seres humanos por el consumo de alimentos. En la industria alimenticia para la elaboración de sus productos, utiliza colorantes y aditivos para poder mejorar ciertas características de los alimentos, hacerlos más apetecibles o para reemplazar pérdidas de color durante el proceso de elaboración de los alimentos. Entre los colorantes artificiales más utilizados están: los azo colorantes, que se han relacionado con reacciones alérgicas, sobre todo en niños, aunque el comité de advertencia de la Administración de Alimentos y Drogas de los Estados Unidos de América (FDA), concluyó que el colorante Tartrazina llamado también amarillo No. 5, puede causar picazón o sensibilidad la cual ha sido clasificada como una reacción de hipersensibilidad y no como reacción alérgica, a pesar de esto, uno de los colorantes más utilizados es la Tartrazina. Considerando que el consumidor tiene derecho de elegir el producto que consume, éste también tiene derecho a saber los ingredientes que son parte de la fórmula del producto, ya que, según la Ley de Protección al Consumidor, los proveedores tienen la obligación de declarar todos los ingredientes que conforman el producto, éstos también tienen la obligación de hacer saber las reacciones que los ingredientes del mismo pueden causar a la salud.
ABSTRACT The objective of the present review is to make known about the effects of tartazine in human beings by the consumption of food. In the food industry for the production of their products, use dyes and additives to improve certain characteristics of food, make them more appetizing or to replace color losses during the process of food preparation. Among the most commonly used artificial dyes are: azo dyes, which have been linked to allergic reactions, especially in children, although the warning committee of the Food and Drug Administration of the United States of America (FDA) concluded that the dye Tartrazine also called yellow FD & C No. 5, can cause itching or sensitivity which has been classified as a hypersensitivity reaction and not as an allergic reaction, despite this, one of the dyes most used is Tartrazine. Considering that the consumer has the right to choose the product he consumes, he also has the right to know the ingredients that are part of the formula of the product, since, according to the Consumer Protection Law, suppliers have the obligation to declare all the ingredients that make up the product, these also have the obligation to make known the reactions that the ingredients of the same can cause to health.
