The objective of the study was to determine the microbiological quality of the pre-cooked, seasoned, frozen and packaged Dosidicus gigas "pota" fillet of a hydrobiological company in Paita, between the months of January and December 2022. The methodology used corresponded to the type applied and quantitative approach, taking as the unit of analysis the reports of microbiological analysis of product in process and finished product, for the production of pre-cooked Dosidicus gigas "pota" fillet, seasoned, frozen and packaged. A total of 304 samples were obtained, of which 115 were pre-cooked steak, 94 were seasoned precooked steak and 95 were finished products. From the analysis of results, 8.35% of the samples had counts of viable mesophilic aerobic bacteria between 1.8 – 5.57 x 10¹ufc/g, while 59.21% had counts between 5.1 – 5.31 x 10²ufc/g and the remaining 32.24% had counts between 2.43 – 4.78 x 10³ufc/g. All samples were negative for Escherichia coli, as were Staphylococcus aureus and Salmonella sp. It was concluded that 100% of the samples presented microbiological counts of viable mesophilic aerobic bacteria within the permitted limits, as well as the absence of pathogenic microorganisms, this suggests adequate quality control and food hygiene, evidencing the effectiveness of the quality control measures implemented during processing and packaging, ensuring consumer confidence and public health.
