The company Licores y Jarabes, producer of fancy liquors and cocktail syrups, carried out a diagnosis of compliance with the current DIGESA requirements, with the aim of entering new markets in the economic reactivation during the State of Emergency. Based on the diagnosis, manuals related to the General Hygiene Principles were redesigned, in accordance with the new requirements of the Simplified Sanitary Protocol (SSP). The redesign incorporated the plans of the facilities as a new requirement, with the objective of presenting the movement of raw materials and supplies, finished product, personnel, vehicles and solid waste; in addition to the presentation of a plan of areas and equipment demonstrating the non-cross contamination. Likewise, the Validation of the cleaning and disinfection of inert surfaces, living surfaces and environments was carried out; through tests in accredited laboratories. In the same way, the personnel training system was redesigned, incorporating information and communication technologies (ICTs) to a digital platform (ICARO) and integrated into synchronous and asynchronous communication modalities (Google meet, Zoom and WhatsApp). Once the prerequisite programs were redesigned, the Hazard Analysis and Critical Control Points System (HACCP) was designed and implemented, which allowed compliance with the DIGESA´s SSP. Finally, in order to evaluate and validate the HACCP System, the SSP was executed through the Digital Documentary Verification Act (DDVA); a compliance level of 98% was obtained, with an increase of 93%, with respect to the initial state (5%). By applying the General Audit Act with a Risk Approach (AARA), a compliance level of 100% was obtained, with an increase of 63% compared to the initial state (37%); final condition that has allowed the company to actively participate in the Peruvian economic reactivation and to access new consumers.
