In times of pandemic, perishable food supply chains have a major challenge in optimizing transportation routes to reach their customers who are geographically dispersed globally. In many cases they present complex constraints to resolve. Therefore, companies in this sector are using methodologies in supply chain designs to meet the needs of their consumers with the right place and timing of perishable food. The objective of this research is to determine the methodologies implemented in the supply chain designs of the perishable food sector to optimize transportation routes focused on the theory of restrictions worldwide in times of pandemic. To this end, the research question is: What methodologies are being implemented in the supply chain designs of the perishable food sector to optimize transportation routes focused on the theory of restrictions worldwide in times of pandemic? In this context, companies in the food sector use transport methods, linear programming, distribution model and supply chain management to minimize constraints. The research question responds through a quantitative, non-experimental review. That is, exploratory and descriptive. In the results, the various investigations indicate the most feasible solution methodologies, the most critical constraints and the process of improvement for the supply chain. In this way, it recommends perishable food companies to optimize their transportation routes to minimize costs and times in addition to supplying and disposing of products. From this point of view, further research could be undertaken to identify the most optimal solutions for transport and to identify other factors impeding the smooth functioning of the supply chain
