Coffee drying consists of reducing the moisture content of the grain, this process is decisive for its final quality, optimal organoleptic properties are valued in the market, however, Peruvian coffee does not maintain these characteristics due to the limited post-harvest infrastructure. Natural coffee drying or dry processing has longer periods compared to the other methods because it preserves all its tissues, which makes it difficult to extract moisture from the grain. The solar dryer prototype is made up of a Programmable Logic Controller (PLC), Internet of Things (loT) module, temperature sensors, ambient humidity sensor, air speed sensors, radiation sensors, scales and Variable Frequency Orives (VFD). The loT module was configured to send the sensor data to the Siemens lnsights Hub cloud, the data for three periods was downloaded and processed. The algorithm and data were analyzed for a week without coffee, and two natural coffee drying processes. An improvement in the control algorithm was proposed considering temperature, environmental humidity and natural coffee mass. The appropriate location of the sensors and the correlations between the variables involved in the drying process were also established. Finally, the environmental conditions and considerations for a correct coffee drying process were settled.
