This thesis was carried out in the UNI dining room facilities, following the procedure of a scientific research where the theoretical framework, legal framework, methodologies, analysis of the results and then conclusions and recommendations were established. The objective of this study is to determine if the workers of the university canteen of UNI are exposed to fire risk, the 3 floors of the canteen were analyzed. The first method is GRETENER, where the analysis of potential danger factors and protection factors was performed on the three floors; basement, second floor and second floor, where a fire safety coefficient value of less than 1 was obtained. This result tells us that the fire safety conditions are insufficient on the three floors of the UNI dining hall, therefore, workers are exposed to the risk of fire. The second method is MESERI, this simplified method evaluated several factors and conditions on the three floors of the UNI canteen facilities; a risk value of 3.01 was obtained for Basement, 3.67 for First Floor and 3.05 for Second Floor, which in relation to the Risk Rating table gives a category of “Bad“. A questionnaire on fire risk knowledge was also carried out, which was applied to the fifty-nine workers in the UNI cafeteria. From which it was obtained that 54% of the population passed the test, according to the considerations of the questionnaire evaluation, they would be in the classification of “Untrained or non-existent personnel“. These deficiencies found in the evaluations reveal the non-existence of a contingency plan, an adequate implementation of fire extinguishers on the three floors of the dining room to fight a fire, implementation of firefighting system, lack of practical and theoretical training of UNI dining room workers
