Abstract: Actualmente debido a las condiciones globales de los mercados, las empresas enfrentan continuos retos de innovación en sus productos o procesos ya existentes con el fin de mantenerse competitivas en el mercado y no estancarse.
Respecto a esto hay una frase que cada vez cobra más sentido en nuestros tiempos: “la empresa que no cambia se muere”, ya que empresas de todo el mundo con altos niveles de tecnología o experiencia resultan ser competencia para pequeñas y medianas empresas nacionales, lo que hace vital para una empresa poder definir y aprovechar sus ventajas competitivas.
En el presente informe se aborda un proyecto de mejora de proceso y formulación en la empresa Multifoods S.A.C.
A finales de 2016 e inicios de 2017 la empresa desarrollo el proyecto de ampliación del volumen de producción en su línea de salsas emulsificadas no pasteurizadas, cambiando el tamaño de su batch de producción de 100 a 500 kg y validando una nueva alternativa de almidón modificado para uso en esta nueva línea.
Se realizaron pruebas industriales con un nuevo equipo homogenizador de 500 kg (Modelo Sina Ekato-500), generando cambios de tiempos de agitación, tiempos de homogenizado (nuevo tiempo de homogenizado de 14 minutos) y dosificación de almidón modificado (Nueva dosificación: 4.78%) y posteriormente se realizaron pruebas con cambio de almidón modificado (Se cambió un almidón de papa y número internacional SIN 1414 a un almidon de maíz y numero internacional SIN 1442), generando un cambio en la dosificación de este (de 4.78% a 4.28%). Estas pruebas industriales se evaluaron mediante microscopía para determinar su viabilidad y estimar su estabilidad de manera comparativa.
Se logró validar un flujo de proceso con el equipo de 500 Kg en la línea de salsas emulsificadas, y un nuevo almidón de maíz modificado pre-gelatinizado SIN 1442, ambos cambios se realizaron manteniendo las características sensoriales, fisicoquímicas y de estabilidad de los productos terminados. Finalmente como resultado del proyecto se obtuvo una innovación debido al cambio de insumo, que redundó en una mejora de costos de producto terminado de 9 a 10%, mejora de tiempo de proceso e incremento de volumen de producción de 10 a 12%.
Currently, due to global market conditions, companies face continuous innovation challenges in their existing products or processes in order to remain competitive in the market and not stagnate. Regarding this, there is a phrase that makes more and more sense in our times: “the company that does not change dies“, since companies from all over the world with high levels of technology or experience turn out to be competition for small and medium-sized national companies, what makes it vital for a company to be able to define and take advantage of its competitive advantages. This report present a process improvement and formulation project in the company Multifoods S.A.C. At the end of 2016 and the beginning of 2017, the company developed the project of expanding the volume of production in the line of unpasteurized emulsified sauces, changing the size of its production batch from 100 to 500 kg and validating a new modified food starch for use in this new line. Industrial tests were carried out with a new homogenizer equipment of 500 kg (Sina Ekato-500 Model), generating changes of the stir times, homogenized times (new homogenized time of 14 minutes) and modified starch dosage (new dosage: 4.78% ) and later tests were carried out with change of modified food starch (a potato starch with international number INS 1414 was changed to a corn starch with international number INS 1442), generating a change in the dosage of this (from 4.78% to 4.28%). These industrial tests were evaluated by microscopy to determine their viability and estimate their comparatively stability. It was possible to validate a process flow with the 500 Kg equipment in the line of emulsified sauces, and a new modified pre-gelatinized corn starch INS 1442, both changes were made maintaining the sensory, physicochemical and stability characteristics of the finished products. Finally, as a result of the project, an improvement in finished product costs of 9 to 10% was obtained.
