In the present thesis work is developed the design of Cool Food system for a consumer supermarket located in the city of Pucallpa in order to preserve the perishable food products. It is a particular design that responds to the problems generated by uncontrolled humidity in supermarkets in places with tropical humid climates, in that sense the use of discharge gases of the refrigeration plant in the implementation of an environmental humidity control (50%-55% HR) system has been considered. To develop the design, it is used a technical literature that has been given by equipment manufacturers, international refrigeration associations and institutions, professional experience among others. This information combineted with an arduous research work has allowed to project a system that takes advantage of the synergy between the refrigeration and the air conditions of the store throght the integration of both systems. The work ends with the technical and economic evaluation in case the humidity control system is put into operation by recovering the Cool Food heat, concluding that its response is feasible due to the positive values of the indicators.
