Following the procedure of a scientific investigation where a theoretical framework has been established with a toxicological approach, and a national and international legal framework to be able to evaluate the results. The objective of this study is to determine if university’s cafeteria workers are exposed to heat stress. The first method applied is the Wet Bulb Globe Temperature (WBGT), where it’s obtained that workers are not exposed to thermal stress. The viability of the use to evaluate this type of agent is also analyzed, making a criticism of the law R.M. 375-2008-TR “Guía Básica de Ergonomía y de Procedimiento de Evaluación de Riesgo Ergonómico“ that establishes the WBGT as the sole evaluation methodology. The second method (Fanger Thermal Comfort) seeks to obtain the Predicted Mean Vote (PMV) and the Predicted Percentage of Dissatisfied (PPD) through the relationship between clothing, metabolic rate, air temperature, average radiant temperature, the relative speed of air and relative humidity or the partial pressure of water vapor. With this methodology we obtain that there are environments between hot and slightly hot. The third method is the Heat Stress Index (ISC in Spanish), which evaluates the evaporation required to recover the thermal equilibrium and the maximum possible evaporation in the study areas. It is acceptable for clothing insulation close to 0.6 clo or 0 clo, which would affect the results obtained since the isolation is greater, according to the results obtained, we have two environments that have severe caloric overload. Finally, an analysis of the results is performed observing the measurements taken in different periods applying the three (3) most used methods in the field of thermal stress measurement to establish conclusions and recommendations for the university cafeteria, considering the physiology and environmental conditions described in the theoretical framework.
