Abstract: El Pisco es obtenido por destilación de los caldos frescos de la fermentación exclusiva del mosto de uva (jugo de uva). Es una mezcla hidro alcohólica cuyo aroma y otras propiedades están determinadas por un conjunto de Compuestos Volátiles, cuya composición depende de manera importante de las variables de destilación. La destilación del pisco es una operación poco estudiada, en particular el comportamiento de los componentes volátiles. El análisis físico químico de todas las muestras del presente trabajo se realizó en el laboratorio de Enología del Cite Vid - Ica.
El trabajo tiene como objetivo desarrollar métodos de control y optimización para alambiques de destilación discontinua que ayuden a establecer la influencia de cada variable de proceso, a fin de obtener destilados aromáticamente diferenciados, en forma reproducible y eficiente.
La evolución de la concentración de los componentes volátiles en la destilación se adapta a modelos matemáticos definidos para cada caso, desarrollados con los datos obtenidos de destilaciones reales, los cuales describen la data con buen grado de aproximación, ecuaciones que, al ser integradas, como resultado de la aplicación del balance de materia, resultan en modelos que coinciden y describen adecuadamente el comportamiento real del destilado acumulado.
Pisco is obtained by distillation of the fresh wines for exclusive fermentation of grape must (grape juice). It is an alcohol mixture whose flavors and other properties are determined by a set of volatile compounds, whose composition depends on important variables. Distillation of pisco is an operation low studied, particularly the behavior of volatile components. The physical and chemical analyses of all samples of this work were done in the laboratory of Enology of Cite Vid - lea. The work has as aim the development of methods of control and optimization for alembics of discontinuous distillation that help to establish the influence of every variable of process in order to obtain products aromatically differentiated in reproducible and efficient form. The evolution of concentration of the volatile components in the distillation fits to mathematical models defined for every case, developed with the information obtained of real distillations, which describe the behavior with good degree of approximation, equations that were integrated. As result of the application of the balance sheet of matter, result in models who coincide and describe adequately the behavior of the accumulated distillate.
