This study was to determine the concentration of Rosmarinus officinalis L (rosemary) essential oil with antimicrobial activity and disinfectant effect on vegetables for direct consumption, with the following methodology: analytical, longitudinal, prospective and experimental. Results: On the antimicrobial activity against Escherichia coli were 10.0, 9.0, 9.0, 9.0, 8.0, 7.0 and 0 mm, for Staphylococcus aureus did not present. The oil prepared as a 40% disinfectant resulted in 20 CFU/g for Escherichia coli, <10 CFU/g for total coliforms. Conclusion: The essential oil of Rosmarinus officinalis L (rosemary) presents antimicrobial activity and disinfectant effect on vegetables for direct consumption due to the reduction of microbial load
