The present research study proposed the addition of an organic banana flour production line from the waste generated in the packaging process in an agro-export association that, on average, is 12,5% of the total banana harvested in the last 5 years. The research design is descriptive, with a quantitative, non-experimental approach, a literature review and the use of a survey were applied. It was evidenced that it is a feasible commercial, technical, technological, environmental and economic-financial project. The opportunity was identified to enter the bakery and pastry market with banana flour, a product based on the discarding of fresh fruit; in partial substitution of wheat flour in a percentage of 20%, in such a way that it does not affect the organoleptic characteristics of the final product of bakeries and confectioneries, and that the nutritional value of the fruit is exploited. After the market study; It was proposed to cover 1% of the unsatisfied demand. The line will have a capacity of 90,91% and will apply the technique of drying with hot air oven. The environmental sustainability of the proposal was analyzed, determining that the waste generated during the process will be used in the banana crops of the association after a previous treatment. The profitability of the project was determined; obtaining a positive VAN of S/ 73 276,97, an TIR of 30% higher than the global TMAR of 17,39% and a cost benefit of S/ 1,11.
