ABSTRACT upreme Decree Nº007-98-SA and its amendment Supreme Decree 038-2014-SA “Regulation of surveillance and sanitary control of food and Beverages” (2010) Ministry of Health, aim to ensure the safety of food in all its phases Through the assurance of sanitary quality, we have analyzed this objective in a company in the food sector dedicated to the processing and supply of meat products. In the company, health quality problems were detected, such as returns and customer complaints regarding the appearance and presentation of the meats, this led to the analysis of the whole process, detecting various factors that put the safety of the product at risk. The main objective was to measure the influence of the design of Good Manufacturing Practices and Standard Sanitation Procedures on the safety of meat products. Initially there was a diagnosis of compliance with the guidelines based on BPM and POES, obtaining 64% of initial compliance, then the design of the system was carried out and its influence on the safety of meat products was projected considering a future implementation, obtaining an improvement projection of 30.5%. In the economic impact analysis, 5.65 was obtained, indicating that the project is viable since it generates greater benefit for the company, the investment that implies the implementation of the design of the quality assurance system.
