Cajamarca is steadily expanding its commercial horizon due to advances in the development of small and medium enterprises (SMEs) and is developing a more and more sophisticated market for commercial items. It is undeniable that the region is rich in resources, one of its most important assets being the production of milk which has set economic, social and cultural standards for the whole region and is recognized at the national level. This environment offers opportunities for the development of dairy production capacities. The general objective of this paper was to assess the feasibility of the installation of a small plant for cheese production in Chetilla, Cajamarca. It concludes that the production of dairies is sustainable not only because the raw material can be put to many different uses but also because it encourages advances in the quality of the production chain, thus promoting local economic development. Studies conducted by the author show that there is currently unmet demand in the city of Cajamarca, which is why the four that were found to be most popular and which comply with high standards of quality will be placed on the market there. Marketing will be based on the fact that the products are manufactured locally. Furthermore, this paper assesses the environmental factors that influence the realization of the project through a proposal for the management of the environmental impact during the whole life-cycle of the plant, taking into account the external factors which will be affected by aforementioned production processes. The total investment amounts to S/. 793910.58, including fixed and working capital. The project is estimated to arrive at a current net value of S/. 768738.91 and an internal rate of return (IRR) of 29.61%.
