A study was carried out of the real situation of the company Villa Andina S.A.C., where several problems were identified that delay the production line of dehydrated aguaymanto. The root causes in the peeling area and directly related to the lack of working methods and time standards. The present research aims to design a system that improves the process of peeling aguaymanto by implementing a conveyor belt and working methods to maximize the productivity of the company Villa Andina S.A.C. It has been hypothesized that the implementation of a system of improvement in the process of peeling aguaymanto, maximize the productivity of the company. In order to comply with this purpose, the working methods are applied and the times are standardized; industrial engineering tools such as the 5, the Ishikawa and Pareto diagrams, etc. are also applied. In addition, simulations of the conveyor belt were carried out, which demonstrated the benefit of its implementation. It concludes that the implementation of the improvement system that includes new work methods and the conveyor belt, reduces the time of the aguaymanto peeling process, allowing to comply with the daily requirement and continue with the chain of production of aguaymanto dehydrated, and therefore increase the productivity of the company. This implementation implies an investment, which according to the indicators is totally profitable. It is recommended to apply the proposed methods of work, as well as to periodically train the workers, in order to improve their performance in the area of peeling, control and support the water directly in the collection center and perform a sampling of the condition of the fruit weekly It is also suggested to implement a conveyor belt, which can automate the transportation of aguaymanto, speeding up and facilitating the peeling process.
