Abstract: La investigación tuvo como principal objetivo determinar la influencia de la
implementación de un modelo de gestión por procesos en la competitividad de Charlie´s
Chicken, empresa que tiene como actividad principal el servicio de venta de pollo a la
brasa, en Trujillo en el año 2018.
A través de la aplicación de encuestas a 385 clientes de la empresa y a los colaboradores,
así como entrevistas al gerente general y resto del personal; más la revisión documental;
se diagnosticó que la situación de la empresa es desfavorable con respecto a sus
potenciales competidores, no logra satisfacer de manera eficiente a sus clientes. Todo
ello debido a la ausencia de las buenas prácticas en gestión bajo el enfoque de procesos.
Al analizar la realidad situacional de la empresa se identificó factores claves de éxito en
los procesos y con el apoyo investigaciones del sector de restaurantes se pudo diseñar e
implementar un modelo de gestión de procesos operativos. Su implementación generó
resultados positivos en Charlie’s Chicken reflejados en las ventas con un incremento de
S/ 55 080.00 y el ahorro de S/ 17 625.60 con la reducción de costos operativos.
Concluyendo que su influencia es significativa en la competitividad de la empresa.
The main objective of the research was to determine the influence of the implementation of an operating process management model on the competitiveness of Charlie's Chicken, a company whose main activity is the sale of grilled chicken in Trujillo in 2018. Through the application of surveys to 385 clients of the company and the collaborators, as well as interviews to the general manager and the rest of the personnel; plus the documentary review; it was diagnosed that the situation of the company is unfavorable with respect to its potential competitors, it fails to satisfy its customers efficiently. All this due to the absence of good management practices under the process approach. When analyzing the situational reality of the company, key factors of success in the processes were identified and with the support of research in the restaurant sector, an operational process management model could be designed and implemented. Its implementation generated positive results in Charlie's Chicken reflected in sales with an increase of S / 55 080.00 and savings of S / 17 625.60 with the reduction of operating costs. Concluding that its influence is significant in the competitiveness of the company.
