ABSTRACT This thesis aims to assess the technical feasibility, economic and financial assistance for the implementation of an industrial plant of whey by-product of cheese in Cajamarca. Was determined as target market sectors A and B, focusing on young children and adults regular sport and increasing campaigns to stay in good health, sports, both locally, nationally and internationally. The market of this project will satisfy the unmet demand of local market and national market precisely the target was determined, being the main destination of whey powder import from countries like Chile with $ 527 000, France with $ Argentina 323 and $ 113 thousand. It won’t establish factory whey processing industry in the city of Cajamarca, specifically in the city of Pucllucana, for its strategic location for the receipt and processing of whey. The main raw materials for the manufacture of whey by-products are water and sugar treated in the main, the machinery and equipment for the production process and the estate I represent the largest investment in the production process. The economic and financial evaluation of project cash flows proved to be feasible within a demanding scenario (20% cost of capital). Based on a net present value is $ 287, 675.13, with a payback period of five years. The investment required to carry out the project is $ 304,747, plus working capital amounting to $ 25, 325, these amounts will be covered by the contribution of the partners. Finally, we conclude that the business plan is viable, based on the growing demand for bread products and bring sports drinks, both locally and nationally.
