Estudio de factibilidad de una planta de mermelada de aguaymanto en la provincia de Cajamarca

Abstract

El presente trabajo representa el resultado de la investigación problemática observada en la región Cajamarca. En los últimos años, dicha problemática se hace expresa en el exceso de producción de muchas frutas locales que terminan en desperdicio. Uno de los casos es la producción del aguaymanto. Lamentablemente, la cantidad de esta fruta desperdiciada no tiene aún un proceso que se pueda aprovechar, es decir, carece de industrialización y a su vez existe un creciente interés mundial, nacional, regional y local por consumir productos naturales, que tengan altos valores nutritivos y de agradable sabor; entre estos productos destacan los néctares de frutas. Nuestro trabajo parte de los antecedentes anteriormente mencionados, que consiste en proponer un proyecto de Estudio De factibilidad Para La Instalación y Operación Económica de una Planta procesadora de Mermelada y deshidratado de Aguaymanto en la Provincia de Cajamarca, que viene a constituir una vía para ampliar la actividad industrial, así como también la expansión de la producción, contribuyendo a la generación de mayor valor agregado en la línea de la industrialización.

Los resultados que pensamos obtener es que con la creación de una planta de derivados de aguaymanto, se maneje una distribución adecuada que cumpla las condiciones óptimas para la comercialización del fruto garantizando que este llegue al consumidor final en excelentes condiciones de calidad.
