Propuesta de mejora en la gestión de producción y logística para incrementar la rentabilidad de una fábrica de productos culinarios, Trujillo 2021

Abstract

El presente trabajo tuvo como objetivo general aplicar la propuesta de mejora en la gestión de producción y logística de una fábrica de productos culinarios mediante el uso de herramientas de ingeniería industrial para el incremento de rentabilidad. Planteado el problema, objetivos, hipótesis y variables, se utilizó la gestión de producción y logística, se aplicaron herramientas como estudio de tiempos, balance de línea, mejora de métodos, gestión táctica, pronósticos, MRP y GANTT, para dar solución a las principales causas raíz identificadas mediante el diagrama de Ishikawa, siendo un total de cuatro. El balance de línea, redujo el costo de mano de obra en S/15,424. Con mejores pronósticos, se redujeron las ventas perdidas por rotura de stock en S/3,095. Con el MRP, y los pronósticos estacionales, se redujeron las compras reactivas por desabastecimiento en S/2,702. El envasado mecanizado, reducirá el costo de mano de obra en S/1,870. Implementando dichas mejoras, se incrementó la rentabilidad en 14.67%. Los resultados de la evaluación económica y financiera de la propuesta tuvieron un VAN de S/3,936; un TIR, 66.79%; Beneficio-Costo 1.75 y Periodo de Retorno de Inversión (PRI), 6 meses. Demostrando la viabilidad de la propuesta.

The general objective of this work was to apply the proposal for improvement in the production and logistics management of a culinary products factory through the use of industrial engineering tools to increase profitability. Raised the problem, objectives, hypotheses and variables, production and logistics management were used, tools such as time study, line balance, improvement of methods, tactical management, forecasts, MRP and GANTT were applied, to solve the main root causes identified through the Ishikawa diagram, making a total of four. The balance of the line reduced the cost of labor by S/15,424. With better forecasts, lost sales due to out of stock were reduced by S/3,095. With the MRP, and seasonal forecasts, reactive purchases due to shortages were reduced by S/2,702. Mechanized packaging will reduce the cost of labor by S/1,870. By implementing these improvements, profitability increased by 14.67%. The results of the economic and financial evaluation of the proposal had a NPV of S/3,936; an IRR, 66.79%; Benefit-Cost 1.75 and Investment Return Period (PRI), 6 months. Demonstrating the feasibility of the proposal.
