Street food has achieved emblematic status in Lima's gastronomic scene, fusing tradition, creativity and flavor. This thesis investigates the significance of this way of eating and the factors that surround it, focusing on the perception of young consumers. The study sought to determine the relationship between perceived service, cleanliness and healthiness with the quality perceived by young adults from Lima who consume street food. Approximately 200 young people from Lima were surveyed about their last consumption experience, and it was concluded that the four hypotheses presented positive correlations, two of medium level and two of weak level. The study took as reference the work “Street food: factors influencing perception of product quality” (Morano et al., 2018) carried out in Sao Paulo, Brazil, adapting the model with variables of perceived quality, perceived service, perceived cleanliness and perceived healthiness. to generate four hypotheses. A questionnaire was designed based on the Likert Scale, validated with the Aiken V coefficient and the help of two expert judges in Marketing. This questionnaire was implemented in Google Forms for easy access and data collection. The theoretical framework was developed with the support of various articles, providing different perspectives and concepts that enriched the research and allowed us to address the problems, objectives and hypotheses of the study.
