The effect of replacing cow's milk with tarwi milk (5, 10 and 15%) and the addition of carboxymethylcellulose (0.15 and 0.30%) on the physicochemical characteristics and general acceptability of a pitahaya cream-type ice cream was evaluated ( Selenicereus undatus). A bifactor arrangement with three repetitions was used for the statistical analysis of the parametric variables, determining through the analysis of variance that there was a significant effect (p < 0.05) in the substitution of cow's milk for tarwi milk and the addition of carboxymethylcellulose. on the overrum, as well as, of the substitution of cow's milk for tarwi milk in titratable acidity and soluble solids; in the pitahaya cream type ice cream. The Friedman Test for general acceptability indicated that there was no significant difference (p<0.05) between the treatments. With the support of Duncan's multiple comparisons test, it was determined that the replacement of cow's milk with 15% tarwi milk and the addition of 0.3% of carboxymethylcellulose presented the best titratable acidity (0.372%), soluble solids (42.53 °Brix), apparent viscosity (4970.7 mPa.s), overrun (81.23%), lower melting (47.45%) and greater general acceptability with a mode of 9 points equivalent to a perception of I like it extremely; in pitahaya cream type ice cream.
