The research focuses on the identification of alternative markets for the export of fresh Peruvian asparagus in the international market, using the methodology of the analysis of macroeconomic variables and an analysis of profitability and risk of exporting this product. To determine the profitability of sending fresh asparagus to the possible countries of destination, the Montecarlo Simulation was used, applying the @Risk software that allows analyzing the level of risk because it shows multiple possible scenarios with the probability of their occurrence and the incidence of explanatory variables on the dependent variable. The FOB (cost, insurance and freight) price and export costs affect the profitability of exporting fresh asparagus. It is concluded that the potential countries that export destinations that have higher levels of profitability and lower risk are: Japan, Australia, Italy and Switzerland.
