-- The determination of the activity of seric cholinesterase in 134 biological samples (109 samples of farmers that work with cholinesterase inhibitor pesticides and 25 of a control group (non exposed group to pesticides)) and the toxicological analysis in 300 samples of vegetable products [cauliflower (Brassica oleracea var. botrytis), tomato (Lycopersicon esculentum), celery (Apium graveolens), lettuce (Lactuca sativa L.), passion fruit (Passiflora edulis)] were realized in Carapongo, district of Lurigancho – Chosica, Lima - Peru. Quantification of activity of seric cholinesterase was realized applying the Ellman modified technique by ultra violet light spectrophotometry. The pesticide analysis was realized by thin layer chromatography (TLC). The average value of activity of seric cholinesterase in farmers that work with the pesticides was 1827,18 mU/mL D.E. +/- 269,99 (maximun value: 2540,09 mU/mL; minimum value: 1294,54 mU/mL) and in the control group was 2263,92 mU/mL D.E. +/- 216,40 (maximun value: 2771,01 mU/mL; minimum value: 1959,30 mU/mL); Normal level of activity of seric cholinesterase: 1800 – 3600 mU/mL. 55,05 % of the group of farmers that work with the pesticides presented values under normal levels of activity of seric cholinesterase (58,89 % of men and 36,84 % of women). The group of farmers that have been working for more than 40 years had the lowest average level of activity of seric cholinesterase (1596,99 mU/mL). The pesticides detected in vegetable samples before harvest were: methamidophos (24,67 %), chlorpyrifos (15,33 %) methomyl (14,67 %) and dimethoate (8,67 %), also the combinations: methamidophos/methomyl (11,33 %), dimetoathe/methomyl (6,67 %), methamidophos/chlorpyrifos (11,99 %) methamidophos/dimethoate (6,67 %).
