Development of domestic techniques for the sanitation and detoxification of alpaca´s meat with Sarcocystis aucheniae macrocyst will help to make it safe for its consumption, by stopping parasite´s biologic cycle and toxin proteic denaturalization to lose its biological action. Domestical physic-chemical meat treatments were used for this objectives: boiling, baking, freezing (for 10, 15 and 20 days); marinate and salting (for 15 and 30 days) respectively for the detoxification of Alpaca´s meat by inoculation of toxin in rabbits and to stop the parasite biological cycle in dogs by feeding them with crude meat with macrocyst. Alpaca´s meat with macrocyst were chopped to apply it the domestical treatments. Biological treated meat evaluation were made to determine sanitazing effect by stopping Sarcocystis aucheniae biologic cycle in the definitive host (dog). The detoxifying effect of the same treatments over macrocyst´s toxin protein by the inoculation of a macrocyst lisate in rabbits were evaluated. Physical treatments prove that they were effective sanitizing alpaca´s infected meat, but chemical treatments do not. Toxin biological activity cause all rabbits death because no treatment make toxin proteic denaturalization.
