The present research had as general objective to obtain an alcoholic drink distilled from Prunus persica (Peach huaycott) from the district Atavillos Low-Huaral. In addition, this study aimed the assessments of bromatological chemical composition of Prunus persica, the optimum parameters for the preparation of an alcoholic beverage from Prunus persica and, distilled alcoholic beverage obtained from Prunus persica. Bromatological chemical study of the fresh pulp of Prunus persica Atavillos Netherlands (Huaral), the following results expressed in g% fresh sample was obtained: 82.34 humidity; 1,87 crude fiber; 0.08 ether extract; Ash 0.31; 0.70 14.7 protein and carbohydrate. In addition, this pulp had a pH of 4.20; 16.5 ° Brix and an acidity of 0.40 g% citric acid. The optimum parameters for the fermentation were pH 4.0, 1: 2 dilution (pulp: water) and concentration of Saccharomyces cerevisiae var. bayanus 0.4 g / L. After analyzing the distilled alcoholic beverage obtained with the above optimal parameters, we found that this drink has an alcohol content of 43.04 v / v and 0.11 g / L of dry extract. Further, the beverage showed the following results expressed in mg / 100 ml of anhydrous Alcohol: 11.75 methanol; 0.00 furfural; 284.81 Total higher alcohols; 103.54 total acidity; 6.56 of ethyl acetate and aldehyde 195.37. The values of methanol, higher alcohols and furfural were within specification as the NTP 211.001; however values ethyl acetate and aldehydes were out of specification by the aforementioned standard.
