--- The aim of this work is to analyze semi hydroponic tomato (Lycopersicon esculentum var. Río Grande) seedlings in order to assess the effect of salt stress over mineral contents in leaves, stem, roots and fruit, as well as over the proteins, sugars, lipids and chlorophyll composition. Three types of semi hydroponic cultures were kept: one in laboratory conditions for 30 days; the second in greenhouse condition for 130 days, and the third in laboratory conditions for 66 days. Results show that changes in the concentration of proteins, sugars, lipids and minerals would let consider 85 mM of NaCl in the hydroponic medium as a stress condition. Metabolic changes firstly occurring are starch, chlorophyll and potassium decrease, and an increase of calcium, magnesium and proteins. Also, it has observed that levels of sodium, calcium and potassium were regulated in short term, unlike the magnesium metabolism, which is regulated in medium or long term. Our conclusions are that salt stress produces toxic accumulations of sodium which causes decreasing on potassium levels, and it causes changes observed in sugar, protein and lipid metabolism. Besides, all these metabolic changes are generating changes in the organoleptic features of fruits. Key words: Salt stress, tomato, minerals content, lipids, proline, sugars, chlorophyll.
