This research aims to carry out an improvement project to increase the efficiency of the production management of a micro sized pastry business by standardizing its processes, which will allow the consolidation of the structure of its operations by providing a complete follow-up and control. An initial diagnosis was made to identify the current situation of the company under study by means of a problem tree. A low average efficiency of the pastry production process was determined, which has affected the productivity index of the company under study. An analysis of pastries production management was proposed using tools such as BPM and Standard Work and methodologies such as the 5S and Deming Cycle, in order to achieve an increase in the production efficiency of the company under study. To obtain the results, a pilot test was developed, which lasted 4 weeks, where the impact of the model and the trend of the indicators developed were evaluated. As a result, the improvement proposal increased pastry production efficiency by 17.22%.
