The present investigation demonstrates how the application of the Lean Manufacturing methodology allows reducing the high rate of shrinkage present in the canning line of a company in the Agroindustrial sector. A study was carried out in a company related to the research sector, therefore, the data collected allowed us to determine which problems are the ones that generate the large amount of loss and what are the causes that originate it, since this generates difficulties for the organization in its competitive environment compared to other similar companies. Through a study of 40 papers, which helped to specify which Lean tools are the most suitable to solve the problem, it was possible to identify that the 5S, TPM and Jidoka tools are the most efficient for the current problem. These tools will make it possible to propose different solutions that will address the problems encountered in different areas of the process. Improving the productivity of the entity through the reduction of shrinkage present in the canning line is one reason why the study was carried out since there are few scientific articles related to the food sector that identify problems or propose solutions to them. Therefore, companies belonging to the sector could use this article as support to solve similar problems in their processes.
