Peru stands out as one of the leading global producers of quinoa, par- ticularly in the Puno region, which hosts over 3000 varieties of this grain. Despite this potential, commercial priorities have overlooked the research on local varieties and the utilization of traditional techni- ques. The lack of organization in the production chain has resulted in benefits primarily going to intermediaries rather than the producers, many of whom are in poverty. Over the years, the domestic demand for quinoa in Peru has increa- sed, and its potential to address issues such as hunger, malnutrition, and poverty is now recognized. In light of this situation, the proposal is to remodel the Hotel Italia in Puno into a Quinoa Research and Outreach Center. This strategic location is chosen because Puno con- tributes to over 50% of the country’s total quinoa production. The refurbished hotel will serve as a hub for the research of local quinoa varieties, training for producers, and the dissemination of quinoa-related information. Moreover, it will leverage the influx of national and international tourists visiting the area throughout the year. Workshops, training sessions, and accommodation for producers will be provided, contributing to the exploration, preservation, and global promotion of quinoa.
